This is what is quickly becoming the norm for dinner. As I have said, I usually hate cooking and I normally can't be bothered cooking anything when I'm home alone, but I've found I don't mind cooking vegetables every night for myself (and even better when I have someone else to cook for). It doesn't take long, and I can cook it whenever I feel hungry - today it was 7.30pm, a few nights ago it was 10pm.
As for the cheese, when I lived in Sydney I used to heat up leftover vegetables and sprinkle grated cheese - usually mozzarella all over the vegetables. Yum! I love cheese and it gave the vegetables a little extra flavor. So I've been doing it again. Because I have started to do the shopping myself and I'm a cheese fanatic, I have all kinds of cheese in the fridge that need to be eaten, so I pick a different kind of cheese every night. Today was coon cheese.
Today I felt fine. Well, I felt good at the fact I'm eating healthy and my body feels great! Yes, I had a few cravings (but that's my fault for watching Gilmore Girls!), but I didn't feel sick, I wasn't in pain, I didn't have low blood sugar, and I wasn't tired. Yes, I still had an afternoon slump, but I'm hoping that will go away with time.
As I said, I watched Gilmore Girls today. It's my absolute favorite show ever and I like to have it on (because I've watched it a billion times I don't need to sit down and watch it) while I did chores all day - I tidied the house, did the dishes, the laundry, did the last bit of planning for my trip and now I'm starting to gather my things to pack. Yes, I know I'm a month early, but what's wrong with being organized?
The bad thing about Gilmore Girls - and it wasn't bad until today - is that all they eat is junk food. Okay, hot chips I can eat. But I'm watching Lorelai drink a soda and I'm almost drooling because I want one! Or chocolate chip cookies. Or cake. Or pie. Or muffins. They eat everything!
I moved on to Sex & The City and that's just as bad. Okay, they are a little more health conscious, but there's so many good bakeries and cupcake places in New York. When I go in September, I may need to go back to sugar for that month - providing I stick with it. I don't know yet. As I said, I'm giving it a month.
